LAZY LUNCH OPTIONS
I am usually running late every morning so I have perfected a list of quick and delicious lunch options. There are a lot of unhealthy frozen meals you can grab on you way, but I have found some healthy lunches that you can throw together in under 10 minutes.
1. MICROWAVE QUESADILLAS - I love Mexican food, and I do not think I'm the only one. I am always making tacos, burritos, and quesadillas. My favorite go-to lunch is a cheese and black bean quesadilla. Just have everything easily accessible in the fridge. Put it together quickly and leave it to microwave for 30 second to 1 minute as you grab all of your things.
2. FRUIT AND VEGGIE BENTO BOX - Salads are one of my least favorite foods. However, there are many other ways to enjoy your vegetables and fruits. Usually on Sundays, someone in my family will chop up all types of fruits and vegetables. All I have to do when I'm packing my lunch is grab a little of everything and go. Not only is it really healthy, but the separation makes the meal seem larger and take longer to eat.
3. PROTEIN GRAB AND GO - For those mornings where you sleep in and skip breakfast, protein will be your best defense against and upset stomach. All sorts of nuts and seeds can be thrown together with a protein bar and maybe some rice if you're lucky. Even a simply peanut butter sandwich can make a huge difference over a yogurt or something light.
4. THINKING AHEAD LEFTOVERS - Everyone loves to have a fast food lunch, but it often impossible to get some in the morning. My favorite thing to do is order two meals if we are eating out the night before. For example, if you're at Taco Bell, get three tacos instead of two so you can stash one and use it for lunch the next day.
5. MULTIPLE SMALL THINGS - Sometimes there may be a lot of small leftover snacks and foods. They may be overlooked, but small items can add up quickly. Even just chips and salsa with some leftover salad and vegetables can make a big difference. A lunch can be built quickly as you include more small things.
6. DUPLICATE BREAKFAST - Some mornings, I have the urge to make an extravagant breakfast. However, I usually spend too much time on that and can't pack a good lunch. If I am already making something more complicated like handmade pancakes, I will just make more of it so I have a lunch. It saves a lot of time and can make better use of your time as you only have to cook one meal for the day. If you think that you will get tired of what you ate, simply change a topping or sauce. Adding a different side can also help.
7. SMOOTHIES - Many people underestimate smoothies and shakes. This tip is simple, but if you're in a rush, either make a smoothie or protein shake. If you are out the door without breakfast, switch your usual coffee run to a smoothie or juice run. It'll give you more energy and make it a better day overall.
